One of the hallmarks of Delaware North across all of our operations is the focus we put on stewardship and corporate social responsibility. Our proprietary stewardship platform, GreenPath®, helps ensure we carefully manage our environmental impact and positively contribute to the communities we serve.

Setting a new standard for efficiency and responsibility, GreenPath has won dozens of awards from NASA, the National Park Service, the U.S. Environmental Protection Agency, the U.S. Travel Association, airports, municipalities, sports and entertainment venues, and others. By saving millions of gallons of water, reducing energy consumption, diverting thousands of tons of solid waste, and seeking far more efficient ways to do things, we have made significant strides in the preservation of the environments in which we operate.

Since its inception in the 1990s, GreenPath — much like the communities and environments it serves — continues to grow and flourish. GreenPath has evolved to include a robust stewardship platform that supports sustainability and features five key branches that go beyond environmental management — demonstrating our commitment to operating responsibly and protecting natural and cultural resources.

Environmental Management

To minimize the impact from our operations, we establish goals and implement improvements focused on sourcing responsibly, eliminating waste, conserving water and reducing energy consumption.

A Sustainable Purchasing Program is one of the most important steps made upstream to reduce impacts from purchases made throughout the operations and to manage waste downstream. We increase the sustainability and transparency of our supply chain by integrating responsible sourcing into the procurement of all products and services.

Key attributes include quality, safety, human rights, animal welfare, environmental protection, local, organic and others. Key products in the operation include ingredients (meat proteins, plant proteins, produce, dairy and beverages) and operational supplies (single-use disposables, cleaning chemicals, paper products, equipment, fixtures and more). Products with credible certifications and eco-labels are preferred. We pride ourselves on offering the highest level of quality and nutrition, starting with our ingredients and operational supplies. We engage producers and purveyors to source products that advance the sustainability and traceability of our supply chain.  Suppliers provide information about sustainability attributes specific to the product category in our Request For Proposals (RFPs), progress updates and compliance reports.

We reduce waste sent to the landfill and promote a circular economy by sourcing responsibly; considering the life cycle of materials; reducing waste at the source; recovering surplus food for donations; promoting reuse; recycling as many materials as possible; composting food scraps; and integrating innovative best practices and technologies. Zero waste is defined as greater than 90% of waste diverted from landfill. We align with the U.S. Green Building Council’s Total Resource Use and Efficiency (TRUE) rating system to guide us in achieving zero waste.

With a great respect for the unique environments and precious resources of our operating locations, we use best practices and technology to implement many of our preservation initiatives. We strive to reduce the environmental, social and financial impacts of energy and water consumption from the operation by improving conservation and efficiency through technical (equipment and fixtures) and behavioral change.

Community Involvement
Social responsibility is the duty and hallmark of being an exceptional corporate citizen. As a member of the community, we engage in myriad actions through volunteerism, donations, services and events to make a difference in people’s lives. Our associates also roll up their sleeves in and around their communities, participate in events such as roadside cleanups, electronic recycling initiatives, and tree planting.

Facilities & Asset Protection
We take our role as stewards of the special places in our care very seriously by investing in projects that have long-term value for future generations. As a member of the U.S. Green Building Council (USGBC), we recognize the need for and value of environmentally friendly facilities to improve efficiency, promote health and wellness of building occupants while providing quality services to our guests. We use the standards set forth by Leadership in Energy and Environmental Design (LEED) to guide our efforts whether it is for ground-up construction projects or renovation to existing facilities.

Healthy Living
We are committed to serving high-quality cuisine that is healthy and sourced locally. We also promote health and wellness initiatives throughout our operations for guests and associates. We operate in some of the world’s most treasured locations where communication and education are key to raising awareness, engaging individuals and activating change. Interpretative and educational programs provide memorable experiences that enhance guest and associate understanding of unique natural and cultural resources.

Product Sourcing
Source products that are sustainable, meet consumer expectations, and make good business sense.

Serve as a good corporate steward informed about the issues and consumer expectations, to serve safe, quality, fresh, healthy, and nutritious food, and continually makes improvements.

Conserve and protect resources to reduce environmental impact through sustainable purchasing, source reduction, waste diversion, energy and water management, using alternative and renewable energy sources, adopting LEED Standards for facilities, and respecting sensitive habitat with unique flora and fauna.

Human Rights
Contribute to the well-being of workers and communities in the global supply chain. Protect human rights that enhance the quality of life and fair trade.

Animal Welfare
Humane practices throughout an animal’s lifecycle to promote health and welfare aligned with the Farm Animal Welfare Committee’s Five Freedoms: 1) Freedom from thirst, hunger and malnutrition; 2) Freedom from discomfort; 3) Freedom from pain, injury and disease; 4) Freedom to express normal behavior; and 5) Freedom from fear and distress. Animal welfare issues include confinement, physical alterations, the use of antibiotics and hormones, living conditions, transportation and processing.

Comply with environmental regulations (federal, state and local), GreenPath requirements, contract commitments, program standards and certifications.

Our Goals

Shell and Liquid Eggs from Cage-Free Hens
Source 100% of shell eggs and liquid eggs from cage-free hens by 2020 in the United States. As of June 2019, we are sourcing 76 percent of shell eggs from cage-free hens and 23 percent of liquid eggs from cage-free hens.

Broiler Chickens
Collaborate with and expect our suppliers to take action that improve the conditions of broiler chickens. The policy requests that poultry suppliers of broiler chickens act on the following by 2024:

  • Improve welfare outcomes associated with fast-growing breed strains according to the Global Animal Partnership’s (GAP) standards.
  • Provide enriched environments, including natural light, hay bales, litter, perches, and lighting per GAP standards.
  • Ensure maximum stocking density is equal to/less than 6 pounds per square foot per GAP standards.
  • Render birds unconscious prior to shackling using controlled or low-atmosphere stunning.
  • Provide details on compliance by a third-party auditor.

Source pork products from animals raised in group-housed systems and eliminate gestation crates from our supply chain.

Eliminate the use of confinement crates for veal products from our supply chain.

Source seafood products from sustainable sources (as defined by industry programs such as the Monterey Bay Aquarium and credible certifications).

Plant-Based Protein
Expand menu items derived from plant-based proteins and promote offerings. Progress is made by creating vegan and vegetarian items on our menus, using plant-based ‘meat’ proteins and providing alternatives for dairy products. We received third party and media recognition from PETA, Dirty Beets, LAX, Ray’s & Stark Bar on our contributions date.

Single Use Packaging
Source 100% of single use packaging products from recyclable, renewable, post-consumer content, compostable or credible certifications by 2025.

  • Eliminate Styrofoam (in 2019)
  • Reduce Single-Use Plastics
  • Eliminate PFAS (Per- and polyfluoroalkyl substances that includes PFOA, PFOS, GenX and other chemicals)

Source tea and coffee products sustainably as identified by third-party guidelines.
