Chef Dawn Hedges Dessert

Peanut Brittle Hummer


2 cups sugar
½ cup water
Pinch of salt
Stick of unsalted butter
1 ½ cups chopped peanuts
8 scoops vanilla ice cream
4 oz Kahlua
4 oz light rum


  1. Stir 2 cups sugar, ½ cup water and a pinch of salt over high heat in a medium saucepan for about 3 minutes without stirring. 
  2. Continue to cook while stirring for another 10-12 minutes. 
  3. Grease a ½ sheet tray with unsalted butter. 
  4. Add 1 ½ cups of chopped peanuts to the sugar mixture until blended. 
  5. Immediately remove the mixture from the heat and spread it on the greased ½ sheet tray. 
  6. Let the peanut brittle cool for at least 15 minutes. 
  7. Break the peanut brittle into pieces. 
  8. In a blender, add 8 scoops of vanilla ice cream, 4 oz Kahlua and 4 oz light rum. 
  9. Pour the hummer mixture into 8 glasses and top with pieces of peanut brittle.
