"Over the past few years, Delaware North, the company that runs the concessions at GABP, has been improving the quality of the food by making more elements of every dish in house. Making sushi fresh, for example, but also grinding their own mix of short rib, top round and bacon for the 1900 Burger, on the pub menu in the Riverfront Club. Or starting with a variety of dried peppers to make a sauce for short rib bites served in the suites as part of a Spanish sampler. They also hand-bread the Machine Room chicken fingers and fried tilapia for fish tacos, and pickle their own jalapenos for the chipper nachos built on Saratoga fries with pulled pork."
